This is a great recipe for those high fatigue or pain days. Not much preparation needed.
Ingredients:
- 2 cups lentils washed and drained
- 1 onion chopped
- 4 cloves of garlic diced
- 1 jalapeno diced
- 1 sweet potato or butternut squash cubed
- 1 tbsp coconut oil
- Salt and pepper to taste
- 1 tbsp turmeric
- 1 tbsp curry powder
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1 1/2 tsp smoked paprika
- 1 1/2 tsp red chili powder or flakes
- 2 tsp cumin
- 1 can diced tomatoes
- 2 1/2 cups coconut milk
- 1 1/2 cups vegetable broth
- 2 cups spinach
- Fresh cilantro or basil for garnish
- Brown rice or quinoa
Making this is as simple as chopping up the veggies. Turning the crockpot to high and throwing everything in there except spinach, cilantro, and Basil. Stir the ingredients to mix well. Cover and cook on high stirring occasionally for about 3 hours. Turn the heat to low and continue cooking stirring occasionally another 2 hours or until lentils are soft and have absorbed most of the liquid. Stir in the spinach a few minutes before serving. Serve over rice or quinoa and garnish with cilantro or basil. You could just eat it by itself too.
