Scotch Chocolate Cake

I started making this cake for my dad around the age of nine. I loved surprising my dad with treats. This was one of his favorites.

This cake is super moist and perfect for chocolate lovers!

I have since modified this recipe to be vegan but I promise you wouldn’t know the difference.

Ingredients:

  • 2 Cups Flour
  • 2 Cups Coconut Sugar
  • 1/2 Cup Coconut Oil
  • 4 T. Cocoa Powder
  • 1 Cup Water
  • 1/2 Cup Coconut or Almond Milk
  • 2 T. Apple Cider Vinegar
  • 1 tsp. Baking Soda
  • 1 tsp. Baking Powder
  • 1 tsp. Cinnamon
  • 1/4 tsp. Salt

Preheat your oven to 350 degrees F. Prepare a 13×9  baking dish. ( I use coconut oil and flour) Then mix the coconut milk and vinegar together in a cup and set aside. Next in a large bowl mix the flour, sugar, cinnamon, salt, and baking powder together. Set the flour mixture aside. In a small pot over low heat combine the coconut oil, water, and cocoa powder. Turn the heat up to high and bring the mixture to a boil. Add this mixture to the flour mixture and stir well.

Stir the baking soda into the milk you set aside at the beginning. It will foam up. Don’t worry this is exactly what you want it to do. 🙂

Add the milk mixture to the cake batter and stir well.

Pour the batter into your baking dish and bake it for about 30 minutes. Let cool and then frost or dust with powdered sugar.

This is my own frosting recipe that I came up with for this cake.

  • 2/3 Cup Coconut Oil
  • 4 T. Cocoa Powder
  • 1/2 Cup Organic Maple Syrup
  • 1/2 tsp. Cinnamon
  • 1/8 tsp. Cayenne Powder ( Sounds crazy I know but trust me!)
  • 1 1/2 to 2 Cups Powdered Sugar
  • Almond or Coconut Milk

This is really simple. Combine all the ingredients except the powdered sugar and milk in a sauce pan. Heat over low heat stirring  until combined. Turn the heat up to high and bring to a slow boil. Lower the heat to simmer. Simmer for about 2 minutes then remove from the heat. Slowly whisk in the powdered sugar a little at a time until you have reached the desired thickness. If it becomes to thick just add a little almond or coconut milk to thin it down. Pour over the cooled cake. That’s it!
