If I had to pick a favorite dish Pad Thai would probably be it. This is how I make it and I hope you enjoy it as well.
Ingredients:
- 1 Pkg of wide rice noodles
- 1/4 Cup Onion chopped
- Thai Chilies ( substitution: 1 1/2 tsp. Thai chili paste or cayenne powder to taste)
- 3 Cloves of Garlic
- 1 tsp. fresh grated Ginger
- Salt and Pepper to taste
- 2 T. Tamarind Paste ( substitutions: equal parts lime juice and sugar, Worcestershire sauce, or puree raisins with vinegar) I usually forget to have tamarind paste on hand so I use Worcestershire and it works great.
- 2 tsp. Lime juice
- 1/2 Cup Vegetable stock
- 1/8 Cup Brown Sugar
- 2 T. Soy Sauce
- Tofu ( optional)
- 1 Egg ( optional)
- Green Onion
- Lime Wedges
- Cilantro
- Bean Sprouts
- Crushed Peanuts ( optional)
- Thai Chili Paste
Mix the vegetable stock, ginger, soy sauce, chili paste(if using), tamarind, lime juice and brown sugar in a bowl and set aside.
Heat coconut oil in a wok on medium high heat. Add onions and cook until golden.
While the onion is browning place the noodles in a bowl and bring enough water to cover them to a boil. When the water has come to a boil pour it in the bowl to cover the noodles. Let them sit for about 7 minutes. Drain and rinse with cold water. Set aside.
Add the chilies and garlic to the onion and cook until fragrant. IfΒ using meat or Tofu add that now and continue cooking until done. Stir in the zucchini and stir fry about 2 minutes.
If adding egg move the onion mixture to one side of the wok and scramble the egg on the other side. When it’s completely cooked stir it into the rest of the ingredients in the wok.
Next add the noodles to the wok. Keep the heat on a medium high setting and add 1/3 of the sauce. Turn the noodles constantly allowing the noodles to soak up the sauce. Add more sauce as needed until you have used all of it. When all of the sauce has been soaked up and the noodles become slightly sticky it’s done.
Garnish with:
- Lime Wedges
- Cilantro
- Green Onion
- Crushed Peanuts
- Thai Chili Paste
- Bean Sprouts
We all love pad Thai but I have yet to find a recipe that all 5 kids like. Super excited to give this a shot.! And love that you included substitute for Tamarind paste! I NEVER remember to pick that up:)

Yummmmmy…I cant have brown sugar ..how about honey or maple syrup? Would that work?

I don’t see why not. I was actually going to try honey myself. I may have at some point over the years and I just don’t remember. π

It is pronounce Phat …In Pad Thai..It varies regionally here.Just like when I lived in the UK names varied by accent and location. Hope that helps π Thank you for the follow π

I’m a huge fan of Pad Thai as well but surprisingly haven’t ever made it at home lol. I will give this recipe a try π
