Apple Carrot Muffins

These muffins are a great companion to your morning coffee.

My daughters favorite. She asked me often to make these and send them to her when she lived in Tennessee.


1 3/4 C. All Purpose Flour

3/4 C. Wheat Four

3/4 C. Bran

1/4 tsp. Salt

1 1/4 tsp. Baking Soda

1/2 C. Sugar

1/2 C. Brown Sugar

1 1/4 tsp. Cinnamon

1/4 tsp. Nutmeg

2 eggs

2 1/4 C. Almond Milk or Buttermilk ( if you don’t have buttermilk add 1 tsp. vinegar to milk)

1/4 C. Oil

1/2 tsp. Vanilla

3/4 C. Shredded Apple ( tart apple like Granny Smith or Pink Lady)

3/4 C. Shredded Carrot


1/2 C. Nuts of your choice ( I like almonds)

1/2 C. Raisins or Craisins

In a large bowl mix flour, bran, baking soda, and salt. Add sugar, cinnamon, and nutmeg to flour mixture. Stir in milk and mix well. Then add eggs, oil, and vanilla. Last add apples and carrots.

Line muffin cups with muffin liners and fill the cups 3/4 full. Bake at 350 degrees for approximately 23 minutes or until toothpick comes out clean.

These never last long around my house. I hope you enjoy them too! 🙂

  1. Well well well, I was actually told that I wouldn’t like these muffins but guess what. I actually ate one this morning and it was very good. Will most likely have another when i walk in the door this evening too. 🙂
