Shrimp Pho

Pho is a Vietnamese soup consisting of broth, rice noodles (Banh Pho), herbs, and meat.

I would have loved to include the history behind Pho but there are some arguments has to how it originated. Some say from the French and some say from the Chinese. Others say it was their own creation coming from the need to find easy, inexpensive ingredients , or using what they had and still having a dish that would be light but at the same time filling. The last one makes sense to me but I honestly don’t know. All arguments had points.

Either way I know it’s delicious!  Great on a cold day…..not that we get many of those in my neck of the woods (desert). imag0795-4

What you will need

  • 1 Lb. Large Shrimp ( or your choice of meat)
  • 4 C. Stock ( of course if you’re using chicken or other meat you would use the stock or broth from that) I use vegetable stock.
  • 2 C. Water
  • 1 T. Vinegar
  • 1/4 to 1/2 C. Fish Sauce or Oyster Sauce ( I use Oyster)
  • 2 Cloves Garlic
  • 1 to 1 1/2 tsp. Fresh Grated Ginger
  • 1/2 of an Onion
  • 1/2 Chopped Celery
  • Salt and pepper to taste
  • 1 Jalapeno
  • Bean Sprouts
  • Fresh Basil
  • Green Onion (chopped)
  • Thai Hot Sauce
  • Lime Wedges
  • Rice Noodles or Banh Pho

It’s easy and fast to make. The longer it sits the better it is. Always better the next day!

All you need to do is cook the onion, garlic, and celery in coconut or olive oil until fragrant. Add the stock, water, vinegar, oyster sauce, and ginger. Salt and pepper to taste. If you’re using chicken add that too. Bring to a slow rolling boil and then turn down and simmer for about 45 minutes.

Just before you’re ready to serve add the green onion and shrimp. Continue to simmer while you prepare the rice noodles.

Place the noodles in a large bowl. Boil enough water to cover the noodles. When the water comes to a boil pour it over the noodles. Let the noodles soak in the water for 10 minutes. Drain well. Then cut them in half. Add to the soup.

The fun part about this soup is everyone can customize it to their taste.

Garnish with:

  • Fresh Basil
  • Jalapenos
  • Bean Sprouts
  • Lime Wedges
  • Thai Hot Sauce
