Tacos are a favorite in my home. I make many variations but this is my personal favorite. These are perfect for me because for the most part I don’t eat meat.
What you will need:
- Sweet potatoes
- 1 Ear of Corn
- Black Beans
- Corn Tortillas
- Cheese
- Fresh Garlic
- Cayenne Powder
- Chili Powder
- Cumin
- Salt and Pepper
- Onion
- Green Onion
- Fresh Cilantro
- 1 Habanero Pepper
- 1 Jalapeno Pepper
- Plain Yogurt or Sour Cream
- Mayonnaise
- Vinegar
- Lime Juice and Limes
- Tomatoes
- Romaine Lettuce
- Avocado
For these tacos I use the sweet potato fries recipe found here in an earlier post. The only thing I do different for the tacos is cube the potatoes.
While the potatoes are cooking lightly oil the ear of corn with olive oil and season to your liking. I use Cayenne powder, Chili powder, Cumin, and Pepper. Throw the corn on the grill and let it get nice and golden. When that’s done cut the corn off of the cob.
For the Sauce:
Mince 1 clove of fresh garlic, 1/4 C. onion, 1 Habanero pepper, and the jalapeno. Coarsely chop 1/2 C. fresh cilantro. Put all of that in a bowl and add.
- 1/2 tsp. Cumin
- Salt and Pepper
- 1 T. Vinegar
- 2 tsp. Lime Juice
- 1/2 C. Mayonnaise (Olive Oil Mayonnaise)
- 1/2 C. Plain Yogurt or Sour Cream
Mix well. Cover and refrigerate until ready to eat.
Heat the black beans and chop the lettuce, tomatoes, green onion, and more cilantro. Slice the avocado and cut wedges of lime.
Fry up your taco shells. Grab a beer and get to building your tacos!
Don’t forget the lime! Enjoy 🙂

You are absolutely right and I would usually use yogurt too but that’s what I had on hand. Glad you pointed that out because I should have included that. I haven’t yet but I remembered them while posting this. I will definitely have to do that. 🙂
