Spicy Tomato and Basil Pasta

You can’t go wrong with this dish. I love spicy food and the combination of spices and fresh basil so delicious! Friends and family love it too making it one of my favorite things to make.

What you will need:

I/2 C. Chopped Onion                            IMAG0326 (2)

1/2 C. Chopped Green Bell Pepper

1 Garlic Clove (minced)

Salt and Pepper

1 Roma Tomato ( chopped)

Fresh sliced mushrooms

1 1/2 C. Chopped zucchini

2 T. Red Chili Flakes

1/2 tsp. Cayenne Pepper

1/2 tsp. Rubbed Sage

1 to 1 1/2 tsp. OreganoIMAG0330 (2)

1 to 1 1/2 tsp Thyme

Fresh Basil

1 can Italian Stewed Tomatoes

2 C. Vegetable Stock ( broth or stock of your preference)

White Wine

1/4 C. Half and Half

Turkey Sausage (My preference is Spicy Sweet Basil Kielbasa)

16 oz. Pasta ( what ever you prefer I use Rigatoni or Penne)

Mozzarella or Parmesan Cheese

Cook pasta until almost done drain and put aside. While the pasta is cooking cut the sausage. I like to cut it at an angle. Sauté onion until caramelized.  Add bell pepper and garlic continue to sauté until you smell the aroma of the garlic and peppers. Add mushrooms, zucchini, and spices. Sauté just until zucchini is still somewhat firm. (crisp) Add white wine, enough to cover vegetables. Simmer about 5 minutes or until reduced. While the wine is reducing brown the sausage. Add stewed tomatoes, stock, and sausage to vegetables. Turn up the heat and bring it to a slow rolling boil then stir in the pasta and add the half and half. Usually I would use almond milk or something of that nature but in this dish I feel half and half works best. Simmer for 5 to 10 min stirring occasionally. Pasta will finish cooking and sauce will thicken slightly. Remove from heat. The sauce will appear to be a little thin still but the pasta will begin to absorb the sauce. Cool about 5 minutes stirring a few times so that pasta absorbs the sauce evenly. Add the Roma tomatoes and fresh basil and lightly toss. Sprinkle with cheese and garnish with more basil.
