Watermelon Margarita

Since Memorial Day weekend is almost upon us I thought I would share this recipe.  Whether you’re barbecuing with family and friends or relaxing at home it’s a perfect summer drink. Light, cool, and so refreshing! It’s my new favorite.

The hardest part about this is cutting up the watermelon and getting out as many of those little pesky seeds as possible.

Ingredients:

  1. Watermelon ( cut into smallish pieces)
  2. 1/2 C. fresh squeezed lime juice
  3. 2 T. lime simple syrup ( see simple syrup below)
  4. 1/2 C. Tequila ( maybe a little more)
  5. 2 T. Triple Sec
  6. Salt
  7. Ice

Simple syrup: Do this ahead as it needs to cool.

  1. 1/2 C. water
  2. 1/2 C. sugar
  3. 1 tsp. lime zest

Combine the 3 ingredients in a sauce pan and bring to a boil. Boil and stir until sugar is completely dissolved. Remove from heat and set aside to cool.

Blend watermelon in a blender until you have 2 cups of puree. Add lime juice, simple syrup, tequila, and triple sec. Blend until frothy. Salt the rims of your glasses, pour over ice, add a lime wedge,  your set.

Of course you can add ice while blending if you prefer a more blended margarita. The watermelon is pretty thick on it’s on so I prefer it on the rocks.
